Cornish Game Hens with a Roasted Raspberry Chipotle Germolataltle

Cornish Game Hens

6 cloves garlic, finely minced
Juice and zest of two lemons
1/4 to 1/2 cup olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon cardamon
1 teaspoon Marsala
1 teaspoon cumin

4 Cornish game hens, trust with butchers twine.

Roasted Raspberry Chipotle Gremolata

2 lemons, juiced and zested
1 pint fresh raspberries
5 to 6 cloves garlic, rough chopped
1/2 cup Italian flat leaf parsley, stemmed and chopped
2 to 3 tablespoons extra virgin olive oil
Salt to taste

For the cornish game hens, mix first 8 ingredients together. Rub game hens with marinade. Place hens in a bowl or zip top bag (pour any remaining marinade over the hens). Refrigerate for at least 1 hour before cooking, up to 8 hours.

Meanwhile, for the gremolata, Place lemon zest, raspberries, garlic, lemon juice, parsley, olive oil, salt and pepper in blender. Pulse to just combine. Add water (about 1/4 cup) if needed. Mixture should not be smooth, but rustic and textured. Adjust seasonings. Adding salt and freshly ground black pepper, to taste. Refrigerate until needed.

To finish the cornish game hens, heat grill to medium heat. Remove hens from marinade and place on grill. Cook 1 hour 30 minutes until golden and crisp. The hens should reach an internal temperature of 165°F. Remove from grill and allow to rest 5 to 10 minutes before serving.

Serve with roasted raspberry chipotle gremolata drizzled on top of the hens and in a bowl for passing.
