Grilled Chipotle Pork Chops and Smoked Gouda Grits

Grilled Chipotle Pork Chops and Smoked Gouda Grits

1/2 cup barbecue sauce
1/2 cup maple syrup
2 chipotle chiles in adobo, seeded and minced
1 teaspoon adobo sauce, from can
6 pork loin chops with bone (1 1/4-inch-thick)
1 teaspoon salt
1 teaspoon pepper

Smoked Gouda Grit:

6 cups low sodium chicken broth or 6 cups water
2 cups milk
1 teaspoon salt
1/2 teaspoon white pepper
2 cups uncooked quick-cooking grits
1 2/3 cups shredded smoked gouda cheese
3 tablespoons unsalted butter

Directions:

1. Preheat an outdoor grill for medium heat.

2. In a small bowl, combine the cheese, bacon, parsley, garlic and 1/8 teaspoon black pepper.

3. Lay the chop flat on cutting board and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff cheese mixture into pocket, and close with a wooden toothpick. Brush meat with oil, and season with salt and more black pepper.

4. Lightly oil the grill grate. Grill over medium heat for on each side or until pork is done, approximately 10-20 minutes per side. Cook time varies depending on the intensity of the heat and thickness of chops, just be careful not to overcook.
